Crockpot Shredded Beef for Tacos

Tender, juicy crockpot shredded beef seasoned with warm spices and slow cooked until fall apart perfect. Amazing for tacos, nachos, bowls, enchiladas and more. Includes Instant Pot instructions too.

Ingredients
  

  • 1 large onion sliced
  • 1 tablespoon garlic powder
  • 1 tablespoon chili seasoning
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups beef broth
  • 2 tablespoons fresh lime juice

Method
 

  1. Mix garlic powder, chili seasoning, paprika, oregano, coriander, salt, and pepper.
  2. Pat the roast dry and coat with the spices.
  3. Add sliced onions to the crockpot and place beef on top.
  4. Pour broth around the roast and drizzle on lime juice.
  5. Cook 8 hours on low or 4 to 5 hours on high.
  6. Shred with two forks.
  7. Stir shredded beef back into the juices and rest 10 minutes.
  8. Serve in tacos, bowls, nachos or burritos.

Notes

  • Add chipotle peppers for authentic beef barbacoa flavor.
  • Keep leftovers with liquid to prevent drying.
  • Add more lime after cooking if you like brighter flavor.
  • Works great as a freezer meal.
